Kualitas Daging Sapi di Probolinggo Aman

PROBOLINGGO – Warga Kota Probolinggo tidak perlu khawatir dengan kualitas daging sapi dan ayam yang beredar di pasaran. Dinas Pertanian dan Ketahanan Pangan menjamin kondisi tersebut melalui pengawasan dan pengujian (uji borax dan kebusukan) yang dilakukan rutin selama dua minggu sekali.

Untuk membuktikannya, Wali Kota Hadi Zainal Abidin sempat ikut mengecek kualitas daging di Pasar Baru, Selasa (21/5) pagi. “Saya percaya kalau di Kota Probolinggo, insyaallah semua pedagangnya jujur. Tidak menjual daging yang tidak layak konsumsi. Kalau harga bagaimana?,” tanya wali kota ke Koko, pedagang sapi Elka Jaya.

Menurut pedagang, harga daging masih cenderung normal. Di kisaran harga Rp 110 ribu per kilogram untuk kualitas bagus, sedangkan kualitas biasa antara Rp 85 ribu sampai Rp 100 ribu. “Naiknya nanti H-1, karena permintaan banyak daging sedikit. Jadi dinaikkan sedikit untuk THR,” jawab Koko.

Menariknya, Wali Kota Habib Hadi justru memberikan tips ke pedagang sapi yang mengeluh pernah kena hipnotis saat membeli sapi di luar kota. Koko juga tidak berani memperkirakan sapi sendiri karena kerap merugi. Ia lebih memilih ke RPH (Rumah Pemotongan Hewan).

“Gini lho caranya, kaki depan dua sapi itu sampean dekatkan gini, terus setelah itu sampean ukur depannya, diamaternya. Ketemu sudah itu berapa perkiraannya,” kata Habib Hadi sambil mempraktekkan apa yang ia sampaikan. Wali kota mengaku tahu tips tersebut karena dulu pernah berkutat dengan perdagangan sapi.

Diketahui, ada empat pedagang di Pasar Baru yang jagal sapi sendiri di RPH; sedangkan di Pasar Wonoasih hanya satu jagal. Kebanyakan pedagang daging di kota ini membeli tengkulak dari Kota dan Kabupaten Probolinggo. Dalam satu hari sebanyak 1,5 ton daging yang beredar di pasar.

Sementara itu, dari hasil tes Reagen Aber untuk mengukur kebusukan dan PH, kepada puluhan pedagang, tim tidak menemukan daging tak layak jual. “Alhamdulillah sidak daging sapi dan ayam hasilnya bagus, tidak ada yang tidak layak untuk dimasak oleh masyarakat. Setelah dicek dengan PH dan kebusukan tidak ada yang melebihi dari 7,” terang Kepala Dinas Pertanian dan Ketahanan Pangan Sukarning Yuliastuti.

Ya, jika ukuran daging kurang dari angka 7 masih bisa dikonsumsi. Apabila sudah lebih dari 7 tidak boleh dikonsumsi oleh masyarakat. “Sebenarnya dengan kasat mata sudah kelihatan jika daging itu sudah tidak layak. Jangan membeli daging yang berwarna kehitaman, beli daging warna merah meskipun harganya agak tinggi,” imbuh Ning-sapaan akrabnya.

Ning berharap kepada semua masyarakat Kota Probolinggo membeli daging yang memang segar. “Karena jika mengkonsumsi daging jelek, bisa membuat sakit perut atau timbul penyakit lainnya, karena sudah ada bakteri yang didalamnya,” jelasnya.

Residents of Probolinggo City do not need to worry about the quality of beef and chicken on the market. Agency of Agriculture and Food Security guarantees this condition through supervision and testing (borax and decay tests) which are conducted regularly for two weeks.

Mayor Hadi Zainal Abidin himself checked the quality of beef at Traditional Market Pasar Baru, Tuesday (5/21) morning. “I believe that all traders in the city, God willing, are honest. Do not sell beef with bad quality for consumption. How about the price?” asked the mayor to Koko, Elka Jaya cattle trader.

According to traders, the prices still tend to be normal. It ranges from Rp. 110 thousand per kilogram for good quality, and Rp. 85 thousand to Rp. 100 thousand per kilogram for the ordinary one. “It will rise a day before the Eid Adha because there is a little demand for beef,” Koko answered.

Interestingly, Mayor Habib Hadi actually gave tips to cattle traders who complained that they had been hypnotized when buying cows outside the city. Koko also has no ability to do measure on his own cow because he often lost money. He prefers to RPH (Slaughterhouse) to do this.

“You better do it this way, attached the front legs, then after that, measure the front, the diameter. Then you can measure the cow,” Habib Hadi said while practicing what he said. The mayor said he knew the tips because he had once dealing with cattle trading.

It was known that there were four traders in Pasar Baru who slaughtered their own cattle in RPH; while in Wonoasih Market there is only one slaughterhouse. Most beef traders in this city buy middlemen from the city and regency of Probolinggo. In one day as much as 1.5 tons of beef circulated in the market.

Meanwhile, from the results of the Aber Reagent test to measure decay and PH, to dozens of traders, the team did not find any bad quality of beef. “Alhamdulillah, the results of the beef and chicken are good, none of which are suitable for consumption. After checking with PH and decay, the result is below 7,” explained the Head of the Agriculture and Food Security Agency, Sukarning Yuliastuti.

If the result of the test is less than 7, it can still be consumed. Otherwise, it will be prohibited from consumption if the result is more than 7. “Actually, we can see with the naked eyes whether the beef has good quality or not. Don’t buy meat that is blackish in color, buy red meat even though the price is a bit high,” added Ning, her nickname.

Ning hopes that all people in the city buy meat that is indeed fresh. “Because if you eat bad meat, it will cause stomach ache or other diseases since there are already bacteria in it,” she explained.

The inspection team included the Agriculture and Food Security Agency; DKUPP; Health Agency; Probolinggo City Police, MUI, Consumer Protection Agency, and Public Order Agency (Satpol PP).
